 Preparation -Time  10 Minutes , Cooking Time 3 Minutes/ only 217 calories per serving

Ingredients  per 2 serving you
100g plain flour
2large eggs
300ml- milk
1 tbsp sunflower oil/ coconut oil
pinch of salt

  • 300g(11oz) assorted fruits, such as strawberries and blueberries,
  • 100g fat free yogurt of your choice, some honey for drizzling
  • caster to serve ( optional).
  • Preparation;  put 100g plain flour, 2 large eggs,  300ml -milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.
    1. Set a medium frying pan or crepe pan over a medium heat and carefully wipe it with some oiled kitchen paper.
    2. When hot, cook your pancakes for 1 min on each side until golden, scatter over the fruits and drizzle with yogurt and honey.  serve immediately.
    3. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months :)
